May 15th: National Pizza Party Day

I just discovered that next Saturday, May 15th is National Chocolate Chip Day AND National Pizza Party Day! How cool is that! Our dinner menu and family activity is now set, so thank you to the people who get to declare these days. You’ve made my life easier. We’re going to make homemade pizza and bake chocolate chip cookies.

We have posted before about How to Throw a Pizza Party at home and shared our Killer Homemade Pizza Recipe, so feel free to read up. If you don’t want to start from scratch, check out our Pizza Party Kit where everything but the cheese is included to make 6 individual pizzas at home. There are even paper hats for you to decorate while you are waiting for the pizza to cook.

While Nestle’s Toll House Cookie recipe is still our favorite, if you are in the mood for a richer, more chocolatey cookie, here’s another family favorite and the recipe we include in every Chocolate Cake Club order:

Chocolate Brownie Cookies
Makes 4 dozen cookies

Cookies
1 (21 1/2 oz.) package of Fudge Brownie Mix
1/3 cup oil
2 eggs
1 (10 oz.) package of semi-sweet chocolate chips, (about 1 1/2 cups)
1/4 cup chopped nuts (optional)

Glaze
Reserved 1/2 cup chocolate chips
2 Tbsp. butter

1. Heat oven to 350 degrees.

2. In a large bowl, combine brownie mix, oil and eggs. By hand, stir with spoon until well blended. Stir in 1 cup of chocolate chips and the nuts, if desired. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.

3. Bake for 9 to 13 minutes or until set. Cool 1 minute; remove from cookie sheets.

4. In a small saucepan over low heat, melt chocolate chips and margarine, stirring constantly. Drizzle over cookies. Let stand until set.

You don’t have to wait until May 15th to enjoy but we hope you have fun cooking together as a family.
